Gut-Nourishing Warm Salmon Poke Bowl

Ingredients
Vegetables
1 bunch broccoli or broccoli stems
1/4 Purple Cabbage, chopped with a drizzle of olive oil, white vinegar and salt
2 tbsp coriander, chopped roughly
2 shallots, chopped finely
2 stalks of celery chopped thinly
1 large carrot, chopped thinly into semi-circles
1 large Lebanese cucumber, sliced thinly longways
1 Roma tomato, chopped finely
1 avocado, chopped into small pieces
Sweet potato slices, roasted with salt and olive oil (optional)
Salmon
4 Salmon Fillets
2 teaspoons of honey
1/4 cup Soy Sauce
1 garlic clove, crushed
SIDE: Rice for serving - 1.5 cups basmati or brown rice, uncooked
Dressing
3 tbsp Japanese dressing
1 tbsp soy sauce
1 lemon juiced
Method
Turn the oven on to 180 degrees fan force.
Marinate the fish and place it on a baking tray. Place into the oven for 20 minutes or until the fillets are cooked but slightly pink inside.
Chop the vegetables and set aside separately on individual plates or sections of a plate.
Prepare the rice as per the instructions on the packet. Once finished, set aside to cool.
Once all the ingredients are complete, prepare the poke bowls by evenly sharing the ingredients to your liking!
